Light, tender and a delight to enjoy for breakfast on a slow morning, this Sourdough Vegan Pancakes recipe is made with Sourdough Starter Discard for a tangy flavor and tender texture.

How to make Sourdough Vegan pancakes

In a medium mixing bowl, whisk the flour, baking powder, baking soda, sugar, salt and cinnamon.

Next, in a large mixing bowl, whisk the sourdough discard, apple sauce, plant milk, vegan butter and vanilla extract.

Gently mix the dry ingredients into the wet ingredients just until there are no longer any dry patches of flour.

Stir the pancake batter down and spoon onto a griddle! Once cooked, it's ready to serve.
