Spinach and Feta Triangles 

They can be made small or larger as an appetizer or light main. Spinach and feta parcels are made with simple ingredients and can be made ahead!  This recipe is vegetarian.

How to make Spinach and Feta Triangles 

Start by sautéing the onion in a bit of olive oil in a mixing bowl. Add a beaten egg to the bowl.

Next squeeze the damp spinach, add to the bowl along with the spices, feta, and parmesan. 

Cut the phyllo sheets and brush with butter and oil. Add a portion of the spinach filling to each triangle. 

Bake the triangles and whip up some easy Greek yogurt dip, then you are ready to serve!
