Mango Mojito Recipe

Fizzy, minty, and slightly sweet this Mango Mojito Cocktail recipe is refreshing and easy to make using fresh mangos, mango nectar or mango juice. Whip up this white rum adult beverage as a cocktail or make it mango mojito mocktail! Make a single or scale it up for a pitcher.

Ingredients

For the Mint Simple Syrup*:

  • 1/2 C (120g) Sugar Evaporated Cane Juice*
  • 1/2 C (115g) Water
  • 2 Stems of Mint stems and leaves

For the Mojito (yields one drink):

  • 1/2 (55 grams) Fresh Lime cut into 4 wedges
  • 4-8 Mint Leaves (depends on taste, I use 8 or more), reserve one stem for garnish.
  • 3 ounces (85 grams) Mango Nectar or Juice **see note
  • 1 - 1 1/2 ounce (28-42 grams) Mint Simple Syrup cooled (recipe above)
  • 2 ounces (57 grams) White / Light Rum or leave out for mocktail***
  • Crushed Ice
  • Club Soda

Instructions

For the Mint Simple Syrup:

  • Pour the sugar and water in a two-quart saucepan, then add the mint and bring to a boil. Stir. Boil until all the sugar is dissolved. Set aside to steep for 10 minutes and allow to the syrup to cool. Remove the mint leaves and pour into a lidded container for storage in the refrigerator until ready to use.

For the Mojito:

  • In a 16 ounce (454 grams) highball glass, layer the cut lime wedges and simple. Muddle the mixture for about 30 seconds or until the limes have released their juice. Add the mint leaves and gently muddle a few times.
  • Add crushed ice to the top of the glass, then pour in the light rum (or omit for mocktail) and mango nectar. Top with club soda, stir and taste for sweetness. Adjust as desired.
    Garnish with a lime wedge or lime wheel and mint stem. 

Notes

*Simple syrup will keep in a lidded container for up to two weeks in the refrigerator, so if needed, double the simple syrup recipe for serving more than two Mojitos. You can make honey simple if desired, which is delish in this recipe. Use equal parts water and honey and bring to a gentle simmer. Turn to low and cook for about five minutes or until slightly thickened. It will thicken as it cools.
**Fresh Mango: Dice 1/3 cup (60gams), about 1/2 a mango, and add it just after muddling the limes. Gently muddle the mango until it breaks down. Continue with the recipe omitting the mango nectar or juice. Garnish with more mango chunks. 
***For a Mocktail: omit the alcohol and add a bit more mango nectar or club and simple to taste. 
Pitcher: For a small crowd, this mojito recipe can easily be scaled up. For ease, muddle the mangos, lime, mint and simple in a large jar, then transfer it to a pitcher. Pour in the white rum, then the club soda. Share quickly so the fizz stays fizzy! Pour over ice packed glasses, then garnish with mint, mango chunks and lime.
