With just a few pantry staples and a touch of mellow shallot, my Maple Balsamic Vinaigrette is an easy homemade salad dressing to pull together in under 5 minutes. It adds instant flavor to salads or roasted veggies. Rich, tangy and lightly sweet, this recipe yields about 2/3 cup and is vegetarian and vegan.
In a small bowl, add the vinegar, maple syrup, dijon, shallot and salt and pepper. Whisking, drizzle in olive oil until a creamy emulsion is formed. Taste for maple syrup adjustment. The dressing should taste bold, slightly sweet and tangy. Alternatively, add all the ingredients to a Mason jar and shake vigorously.
To Store: store in the refrigerator in a lidded container for up to a week. Before using, set at room temperature for about 15 minutes. Whisk or shake before using.
Notes
*Balsamic Vinegar: brands vary widely in sweetness and viscosity. Depending on the sweetness of your vinegar, adjust the maple syrup to taste.
