A Frosty Sipper

Summertime and the freshest strawberries call for a frosty adult beverage. And what could be better than a frozen wine mix of fresh strawberries, rosé, honey (or a little simple) and a glug of Aperol, Lillet Blanc or orange liqueur for a refreshing summer drink? Next to these minty Fresh Strawberry Mojitos and Blueberry Mojitos, this is my summertime favorite.

New to rosé wine? It’s particularly delightful during the warmest months. Serve chilled, rosé is refreshing and light with notes of strawberry, rose, pineapple, rhubarb and citrus. It pairs deliciously with summer’s freshest juicy fruit and is a perfect choice to use in a wine slushie mix.

About the Key Ingredients

Rosé Wine – this is a fruity light pink wine that’s served chilled. It’s particularly refreshing during summer. 

Fresh Strawberries – fresh, plump and in season. The fresher the fruit, the brighter the color and best flavor of the finished slushie.

Simple Syrup or Honey – simple syrup lightly sweetens the slushie, bringing out the strawberry’s fresh fruity flavor. You can use honey for sweet floral flavor or, if you’re in a hurry!

Aperol, Lillet Blanc or Orange Liquor – any of these can be enjoyed in your strawberry slushie. The Aperol adds a boost of pink color and a touch of bitterness, while lillet offers mild sweet fruity flavor and orange liquor, a touch of orange.

How to Make Frozen Wine Slushies in A Blender
Step by Step

Making More Than One Batch

When making more than one batch of this recipe or if using the blender for other kitchen tasks, freeze the blended wine mix in ice trays instead of the blender pitcher.

Once frozen, pop the frozen cubes into the blender, add a bit of liquid rosé, blend again then store the frozé in a lidded container in the freezer.

Doing this frees up the blender and/or allows preparation for more than five servings ahead of when needed. When ready to share, set the frozé container on the kitchen counter for about 10 minutes to soften. Frozé can be made up to one week in advance.

Note that the wine slushie mix won’t freeze all the way because alcohol’s freezing point is lower than a typical home freezer will get. The frozen mixture is icy, but can easily be moved around with a fork .

Traci’s Tips

  • For one recipe of strawberry wine slushies, you won’t use the entire bottle of rosé. Enjoy leftovers for sipping or store in ice trays for future frozé adventures.
  • Honey or Simple Syrup? I like both but use honey when I don’t plan ahead to make the simple (it needs to be cool). Honey adds nice floral notes and interest. Use either. I added an easy to make simple syrup recipe in the recipe notes.
  • Play with the flavors to your heart’s content. Frozé is also lovely with cherries, raspberries and watermelon!

Ingredients

  • 1 cup (226 grams) Rose Wine, plus up to 2/3 C (141g) more for blending after frozen
  • 1 cup (155 grams) Fresh Strawberries
  • 1.5 ounces (42 grams) Simple Syrup, or 4 tablespoons Honey – adjust to taste
  • 2 ounces (57 grams) Aperol, , Lillet Blanc or Orange Liquor like Grand Mariner
  • 1/2 Lemon, juiced
  • 1/2 cup (70 grams) Ice , crushed

Instructions 

  • Into the pitcher of a high speed blender (I use VitaMix), add the strawberries, rose, simple or honey, Aperol (or Lillet Blanc or Orange Liquor), lemon juice and ice. Blend until liquified.
  • Place pitcher in the freezer and freeze for 6-8 hours.
  • Scrape the icy mixture from around the blender blades and add up to 5 oz more of liquid Rose to thin and to help get the blender blades moving. Blend, pulsing if needed and adding more Rose' as needed to loosen the mixture.
  • Share right away or scrape mixture into a storage container and freeze until ready to share.
  • Strawberry wine slushies can be made up to one week in advance.

Notes

*To make simple syrup: Pour 1/2 C (120g) sugar and 1/2 C (116g) water in a two-quart saucepan. Swirl the pan to mix the sugar and water. Bring mixture to a boil until all the sugar is dissolved. Pour into a lidded heat proof container for storage in the refrigerator until ready to use.

    Sounds fantastic! I’m going to make this tonight for a distance porch (mid pandemic calls for these types of measures) visit with my friend. One question I have is can I use frozen strawberries? 🍓

    Oh one or two of these would certainly help make the hot, humid days here a bit more bearable. I just returned from a week on the coast of Maine where it was probably more comparable to Whidbey Island’s temperatures so I escaped for a little bit.
