Fizzy, minty, lightly sweetened and packed with strawberries and lime, a Strawberry Mojito Cocktail is refreshing and easy to make in about 10 minutes featuring fresh, plump strawberries, lime, mint, white rum and club soda. A splash of simple syrup gives it a sweet but balanced edge.

Like my Mango Mojito, you can whip up this light rum adult beverage as a cocktail or make it a mocktail! Make a single or scale it up for a pitcher.

An Inspired Take on Mojitos

Have you tried a strawberry mojito?

I’ve always been a fan of the classic minty lime cocktails, but strawberry mojitos?

It was a pre-birthday celebration, at Barrio Mexican Kitchen in Seattle where I flipped out over this mojito. Oh my, have you been? If you’re ever in Seattle, you must go! I had smoked mushroom enchiladas with, you know it, a strawberry mint cocktail (hello mojito). Talk about inspired!

They’re such a treat and best with the freshest, juiciest in season strawberries. They’re simple to whip up too!

If you make craft cocktails at home, you’ll enjoy the simplicity and taste of this minty and fresh mojito.

About the Key Ingredients

You may be wondering what’s in a strawberry mojito, but they’re the same as the classic, only with fresh strawberries. Use the most local, in season, organic and freshest of strawberries you can. They’ll be juicier, sweeter, vibrant and take this refreshing cocktail over the top!

  • Homemade Mint Simple Syrup – this quick recipe is only three ingredients: sugar, water and mint. You can make it days ahead or if you need it last minute, cook the mixture then pop it in the freezer so it has time to cool.
  • Fresh Strawberries – look for plump, juicy, and in-season strawberries for the best flavor.
  • Fresh Mint –  a highlight of fresh mojitos. It adds a subtle, refreshing minty flavor.

  • Fresh Lime – adds a bright tangy flavor with a hint of acidity. It balances the sweet notes of the strawberries and simple syrup.
  • Light or White Rum – a clear spirit that tastes smooth, mild and subtle. Due to its mild flavor, it doesn’t get in the way of the fresh flavor of strawberry and mint. For a mocktail, omit this ingredient.

Be sure to pick up extra mint for a pretty garnish! I grow mint in a small herb patch specifically for mojitos and tea. It’s a fail-proof plant and it’s one thing the deer don’t eat.

How to Make a Strawberry Mojito
Step by Step

4. add the rum if using and top with club soda.

A Strawberry Mojito Pitcher Recipe

For a small crowd, this mojito recipe can easily be scaled up. For ease, muddle the strawberries, lime, mint and simple in a large jar, then transfer it to a pitcher. Pour in the white rum, then the club soda. Share quickly so the fizz stays fizzy! Pour over ice packed glasses, then garnish with mint, strawberries and lime.

Traci’s Tips

  • Make Ahead: The mint simple syrup can be made a week in advance. I sometimes forget to make it, so after pouring the freshly made simple into a storage container, I pop it in the freezer, unlidded for about 1/2 an hour to cool.
  • Mocktail: For a non alcoholic strawberry mojito recipe, simply omit the rum and add a bit more club soda and simple syrup to taste.
  • Vodka Instead: For a strawberry mojito recipe with vodka, simply swap the rum for vodka.

10 Minute Strawberry Mojito Recipe

Fizzy, minty, slightly sweet and packed with strawberries and lime, a refreshing summer cocktail, this Strawberry Mojito is sure to quench your afternoon thirst.

Ingredients

For the Mint Simple Syrup*:

  • 1/2 C (120g) Sugar Evaporated Cane Juice
  • 1/2 C (115g) Water
  • 2 Stems of Mint stems and leaves

For the Mojito (Yields one drink):

  • 1/2 (55g) Lime cut into 4 wedges 3 wedges cut 1/2, save the last wedge for garnish
  • 4-8 Leaves Whole Mint (depends on taste, I use 8 or more). Reserve one stem for garnish.
  • 4 (125g) Strawberries 3 large, quartered for muddling, 1 berry for garnish
  • 1 – 1 1/2 oz (28-42g) Mint Simple Syrup cooled (recipe above)
  • 2 oz (57g) White / Light Rum or leave out for mocktail**
  • Crushed Ice
  • Club Soda

Instructions

For the Mint Simple Syrup:

  • Pour the sugar and water in a two-quart saucepan, then add the mint and bring to a boil. Stir. Boil until all the sugar is dissolved. Set aside to steep for 10 minutes and allow to the syrup to cool. Remove the mint leaves and pour into a lidded container for storage in the refrigerator until ready to use.

For the Mojito:

  • In a 16 oz (454g) highball glass, layer the cut lime wedges, mint leaves, and quartered strawberries.
  • Pour in the simple and muddle the mixture for about 30 seconds. The goal is to squeeze out the lime juice, mash the berries and to allow the mint to release its oils. There should be bits of strawberries left when muddling is complete.
  • Add the light rum (or omit for mocktail) to the muddled mixture, then add crushed ice (I fill mine almost to the top). Top off with Club Soda.
    Stir well.
    Garnish with a lime wedge, medium strawberry, and mint stem. When finishing the mojito, have a spoon on hand to dig out the delicious strawberry bits!

Notes

Pour in the white rum, then the club soda. Share quickly so the fizz stays fizzy! Pour over ice packed glasses, then garnish with mint, strawberries and lime.
*Simple syrup will keep in a lidded container for up to two weeks in the refrigerator, so if needed, double the simple syrup recipe for serving more than two Mojitos.
**For a Mocktail: omit the alcohol and add a bit more club and simple to taste.

    I plan on making your “Strawberry Mojitos” for our camping trip. I would like to make them ahead of time. I will add club soda at last minute of course. Have you ever tried it? Wondering how many days would work?

      Hi Sherry! I’ve not tried making these advance, so I’m not sure. However, mint tends to break down after being muddled. I’m afraid it and the strawberries would brown if left for more than a day.
